Artichoke & Angel Hair Pasta
1 box angle hair pasta
1 can (15oz) of diced organic fire roasted tomatoes
1 jar (6oz) capers
2 jars (8oz) marinated artichoke hearts
1 can chopped black olives
3 cloves garlic
1-2 tablespoons olive oil
1 bay leaf
1 tablespoon oregano
-Heat olive oil in pan over high heat for 2 minutes.
-Add garlic and sauté for another 2 minutes.
-Add tomatoes, bay leaf, and oregano and let cook for 5 minutes. Stirring occasionally.
-Lower heat to simmer and add capers, artichoke hearts, & black olives
-Let simmer for about 15 minutes
-Add Salt & pepper to taste
-While simmering prepare angel hair pasta following directions on the box.
-Serve sauce over angel hair.
