1 teaspoon arrowroot flour
1 teaspoon soy flour
1/2 cup warm water
Mix everything together, and bam! A substitute for 1 egg.
I love using arrowroot powder as a thickener in sauces (vegan mac n cheese) and as an egg replacer. I use 2 tsp arrowroot powder mixed well with 3 tbs water, which is much less water that this recipe calls for. I find 3 tbs to be adequate water.
