Apple Walnut Balls

What you need: 

1 cup rolled oats or granola
1 cup walnuts
2 tablespoons ground flax seed
1/4 teaspoon cinnamon
pinch nutmeg
2 tablespoons applesauce
1/2-1 tablespoon maple syrup
1/4 cup powdered sugar

What you do: 

1. If using rolled oats, toast in a dry saute pan until lightly browned. Place granola/oats, nuts, flax, cinnamon, and nutmeg in a food processor. Pulse until a fine mixture forms.
2. Add applesauce and 1/2 tablespoon maple syrup. Pulse until the dough starts coming together and able to form balls.
3. If the mixture is too dry, add more maple syrup until it comes together. Measure out with a tablespoon and form into balls. Roll balls in powdered sugar. Keep refrigerated.
I was wanting a healthier dessert that wasn't too sweet, and it turned out pretty well! If you're wanting them to be sweeter, substitute some or all of the applesauce with maple syrup, agave, or any liquid sweetener.

I am currently eating one of these. I added chocolate chips and skipped the powdered sugar and they are really really good! Not overly sweet, which I love.
