Apple Deeeelite

What you need:

2 tablespoons wheat germ or oats
1 tablespoon margarine
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon fig preserves (other preserves would work, but fig is best)
1 tablespoon raw sugar
1 large apple, cored and sliced in 1/2
1/4 cup nondairy milk, optional

What you do:

1. Preheat oven to 400 degrees F. In a bowl, combine the wheat germ (or oats), margarine, spices, preserves and sugar.
2. Fill the holes in each apple 1/2 with the mixture.
3. Wrap in aluminum foil and cook in oven for 25-30 minutes, until soft. Serve in a bowl, drizzled with the milk, if desired.
Yum! Great for a quick sweet fix.

The family wanted something sweet after dinner tonight and this was perfect.  We used homemade raspberry plum jam.  Wonderful.  Definitely, place on top of a sheet because of the juices from the apple even when it is wrapped in foil.  :)

We tried it with and without soy milk.  If you like vanilla ice cream on your apple pies...then go for adding a little milk.  Next time I might try vanilla almond milk.

This really hit the spot when I wanted something for dessert but didnt want anything overly sweet. Instead of jam, I put in peanut butter like other people suggested. Also, I took the tip and wrapped the apples in foil, which was great advice.

Thanks for the recipe!  :)

This is a great recipe! I have a very picky partner so I did not use any jam. I subbed fresh cranberries and a little soy milk in the mix instead of jam. I also used oats instead of wheat germ and omitted the nutmeg cause I forgot it. It turned out great but I would suggest putting the foiled wrapped apples on a cookie sheet cause mine dripped a lot. The drippings burned onto the bottom of my oven and my kitchen filled with smoke, which was not so great lol. Thanks for the recipe!
