Apple Cranberry Oats

What you need: 

2 cups water
1 cup cranberry juice
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 cup steel cut oats
2 tablespoons ground flax seeds (optional)
1 large apple, diced into 1/2" pieces
splash nondairy milk

What you do: 

1. Place water, cranberry juice, cinnamon, and ginger into a medium-sized pot and bring to a boil.
2. Add steel cut oats and ground flax seed, return to boil. Stir, cover pot and cook on low heat for 10 minutes, stirring occasionally.
3. Add apples and continue to cook covered in low for 10 to 15 minutes, stirring occasionally, until the oats are cooked and most of the liquid has been absorbed.
4. Serve with a splash of non-dairy milk. I like to have sliced Tofurky kielbasa on the side. Enjoy!
Source of recipe: I had some steel cut oats and an apple I wanted to use up so this is what I came up with. I have used honey crisp and golden delicious for this and both have worked out well, feel free to use whatever apples you have on hand.
