Apple Cake

What you need: 

Cake:
2 cups spelt or whole wheat flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 cup vegan maple syrup
1/2 cup unrefined corn oil
1 cup apples, diced
1/3 cup apple juice Topping:
1/2 cup walnuts, chopped
1/2 teaspoon cinnamon
2 tablespoons brown rice syrup or maple syrup
1 teaspoon unrefined corn oil

What you do: 

1. Preheat oven to 350 degrees F, and lightly grease an 8" springform pan. Place dry ingredients in a bowl and mix well.
2. Mix wet ingredients together and add to dry. Mix. Place in prepared pan.
3. For topping, mix all ingredients together and spread evenly over cake. (You may have to wet fingers to spread mixture evenly.)
4. Bake for 40-45 minutes. Cool and serve.
This recipe works equally well with pears. Just add 1 teaspoon ginger to cake and 1/2 teaspoon ginger to topping. Instead of above topping, spread with favorite jam or apple butter and put nuts in cake.

SO HOW'D IT GO?

I used sliced almonds for the topping and a bit more apples (and it could work with even more apples).  This cake actually rose well - which isn't a given with vegan cakes.  Great recipe!  The omnivores I served at the dinner party loved it - and it isn't too sweet.

My son wanted an apple cake for his birthday and this was great.   ;)b

Since it's late summer and the only baking apples I can find are Gingergolds, I made some adjustments to boost the apple flavor.  I replaced 1/2 cup maple syrup with 1/2 cup apple juice concentrate, 1/3 cup apple juice with 1/3 cup apple cider, and replaced 1/2 the oil with equal volume of applesauce. 

I topped it with a caramel frosting covered it with chopped peanuts and stuck a pretzel rod in the top to make it look like a candy apple.

Tasty stuff!  I threw in some raisins, dried cranberries, and 1/2 tsp of powdered ginger as well.  Didn't have corn oil, so I used soybean oil instead.  My SO and I both liked it.  Thanks for the recipe!

This was lovely, really light and flavorful but could have used another 1/2 c or more of chopped apple.
