Perfect Meatballs

Ingredients (use vegan versions):

    textured soy protein (soaked in water)
    2 garlic cloves crushed
    1 onion chopped
    3 tablespoons of parsley
    1 Ener-G Egg Replacer
    1/4 cup bread crumbs
    salt
    pepper
    oregano
    basil

Directions:

The measurments are approximate, but add all toether form into balls bake for about 30 minutes and serve with spagetti and sauce!

Preparation time: 20 minutes


At what temperature do you bake your meatballs?

I baked these at 400F/200C/Gas 6 and they were perfect. Had them with a spicy tomato sauce and spaghetti - one of the best veggie meatball recipes I've made....yum!

i made these the other night and they were very nice, altho they could do with a little spicing up if you like em spicy that is.next time i will add some spices and possibly some tomato puree. i added a little tomato paste and soy sauce to the water when i soaked the tsp. held together well while cooking but crumble quickly when eating unless you can get it in your mouth whole, i served with spaghetti and a pureed sauce of peppers,onions,tomatos,garlic,herbs etc.

You could try using gimme lean beef flavor instead of tvp, because it has more of a gooey consistancy like meatballs.  How much egg replacer.  Is one egg two tablespoons or replacer?

i meant is one egg two tablespoons of replacer? I always have a hard time getting the amount right.

MCBROCK70--When using the Ener-G Egg Replacer, 1 egg = 1 1/2 teaspoons of the powder mixed with 2 Tablespoons water.  I hope this helps!

We made these tonight and the flavor was funny, but they did not stick together at all...they turned out more like a stuffing like consistency. Flavorful but not what we were looking for. I think using a nice binding ingredient might do more good than the Ener-Gs. Maybe a puree of some kind?
