Anna's Ultimate Tofu Sandwich

What you need: 

6 squares smoked and pressed tofu (tofu gan)
marinade: juice of 1 lemon
2 tablespoons tahini
2 tablespoons sweet chili sauce (to taste)
4 slices wholegrain bread
roast sweet pepper slices
lettuce or spinach leaves
thinly sliced tomato
thinly sliced red onion
vegan mayonnaise
small amount oil for frying

What you do: 

Combine lemon juice, tahini and sweet chili sauce. Split tofu squares down the middle with a knife and cover with marinade; allow to rest at least 30 minutes (you can prepare this early in the day or the night before, longer is better).
Pan-fry marinated tofu slices until brown and sort of crispy; construct sandwich, using salad ingredients to taste.
This can of course be done with regular tofu slices as well.
