Amazing Potato Salad

What you need: 

8 medium potatoes, peeled
1/2 cup onions, chopped
2 stalks celery, chopped
1 or 2 pickles, diced (sweet or dill)
1 cup vegan mayo
1 teaspoon mustard
1 teaspoon Dijon mustard
salt and pepper, to taste
sprinkle paprika

What you do: 

1. Boil potatoes for about 25 minutes, or until soft. Drain and let them cool for a few minutes.
2. Cut potatoes into small cubes, and put them in the fridge for about an hour to cool off some more.
3. When potatoes are cool, place in a bowl or dish, and stir in the onions, celery, pickles, mayo, mustards, salt and pepper. Sprinkle paprika on top.

SO HOW'D IT GO?

Sweeeet! This is def gonna be my new go to recipe for potato salad now, I've needed to find one for a long time. The one and most important thing I remember from my mom's recipe is how she'd cool the potatoes overnight *soaking in some pickle juice* to make it extra awesome, so I'll just add that part in to this one. YAY!

This is a very good recipe.  I wanted to make potato salad to take to a Labor Day party but couldn't decide which recipe...I went with this one because it was featured in the Labor Day Feast newsletter and I wasn't disappointed one bit.  The non-veg people at the party loved it and had no idea it was made with Vegenaise instead of mayo.  The only difference I made to the recipe was to add some sliced olives, which I like in my potato salad.

This was very yummy, I used sweet relish and celery salt, but otherwise stuck to the recipe and loved it. a keeper ;)b

I LOVED this salad!

This was basically my first vegetarian meal that I made from scratch (made my own mayo/miracle whip that tasted AMAZING!) and added it to this salad.

I made a huge bowl full of it and everyone in the house loved it (I'm the only veg.) The salad only lasted a couple hours lol. I left out the mustard and pickles cause I was worried that my homemade mayo would be too strong on its own... but I know next time i will definitely add in the mustard/pickles.

This salad truly is amazing! I don't know what it is about it, but it's addictive! I took it to a non-vegetarian potluck tonight, and several people asked me for the recipe. I used red potatoes and red onions, added fresh green peas and radishes from my pea-patch, an extra teaspoon of yellow mustard, and a teaspoon of salt. And of course I used Vegenaise, the absolute best! I had hoped to bring home more left-over salad, but there's only a small bit for lunch tomorrow. Oh well, there's something to be said for being popular!

This recipe was awesome! I usually don't add the celery but always add celery flakes. I add lots of pickle to it and usually like to top off the potato salad with green tabasco sauce. Sooooo yum. I make up a ginormous batch of it and my sister and I polish it off within two days. =)

I just made this for a picnic tmrw with some slight alterations.
I didn't have (and don't really like) celery so totally omitted that.
Didn't have paprika, though wish i did.
And I used a tablespoon of my favorite (Kosciusko - polish! - mustard) instead of the 2tspns reg/dijon.
I also added about half a red bell pepper, diced, at the last minute.
It came out delicious! For some reason I was a bit wary of the pickles... but I'm glad I threw them in anyway because they def MADE this salad.
(I also didn't measure the vegenaise exactly but I'm sure I used less than a cup. Didn't want everything to be swimming in it, just wanted a cohesive flavoring...)
