Amazing Jicama Salad

What you need: 

1 large jicama, peeled and julienned
2 tomatillos, diced
1 ripe mango, sliced
2 shallots, peeled, and sliced into crescents
1 avocado, sliced, optional
fresh cilantro leaves, diced, optional
2 fresh limes, zest and juice

What you do: 

1. Place jicama into a large salad bowl. Add tomatillos to the bowl. Add mango to the salad bowl as well. Add shallots to the mixture as well. If you choose to do so, add avocado and cilantro now.
2. To make the salad dressing, zest and juice the two limes over your salad. To zest a lime, simply grate the skin over a very fine cheese grater. (Obviously you should remove any price stickers and wash the lime before zesting) Then, cut the limes in half and squeeze the juice over your salad.
3. Toss, and chill to allow the flavors to marinate. Serve as a side dish or small appetizer.
Source of recipe: I "wrote" this recipe by throwing together a bunch of ingredients my friend and I found at a natural food store. This was the delicious result of our unholy experiments!
