3 cups baby wild arugula
5 thin Persian cucumbers, washed and chopped in small cubes
3 medium tomatoes, washed and chopped in small cubes
3 scallions, washed and diced
1/2 cup fresh parsley, washed, destalked, and chopped finely
2 tablespoons dried cranberries
1 tablespoon dried cherries Dressing:
2 tablespoon virgin olive oil
1 tablespoon freshly squeezed lemon juice
1 teaspoon vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
dash of cayenne pepper
1. Salad: In a bowl, mix together salad ingredients.
2. Dressing: Wisk the dressing ingredients together in a bowl until smooth and add just before serving salad
