Amaranth Grits

What you need: 

1 cup amaranth
1 small clove garlic, peeled and finely chopped
1 medium onion, peeled and finely chopped
3 cups water or vegetable stock
sea salt and pepper, to taste
hot sauce, to taste, optional (I use Texas Pete)
1 tablespoon vegan margarine, optional

What you do: 

1. Combine the amaranth, garlic, onion, and stock or water in a 2 quart saucepan.
2 Boil, reduce heat and simmer, covered until most of the liquid has been absorbed, about 20 to 25 minutes.
3. Stir well. If the mixture is too thin or the amaranth not quite tender (it should be crunchy, but not gritty hard), boil gently while stirring constantly until thickened, about 30 seconds. Add salt and pepper, to taste.
4. Stir in a few drops of hot sauce and margarine, if desired.

I've been searching for some amaranth grain salad recipes. Think I am going to make an asian flavored one with it. But my boyfriend might like his made like this recipe for grits.

I had some amaranth and wasn't sure what to make with it, and since it was the AM, I made this.  It wasn't too exciting as is, but with some additions it's pretty good.  I ate the leftovers with steamed broccoli and spinach and canned artichokes mixed in, and that was awesome.  I think this could serve as a good base for all kinds of things.
