Almond Orange Coconut Snack Cake

What you need: 

1 ripe banana, mashed
scan't 1/2 cup of sugar (I used brown)
Juice from one orange
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup unsweetened shredded coconut
1/4 cup almonds (whole, chopped, toasted, whatever)

What you do: 

Preheat oven to 350 degrees.
Mix banana and sugar until smooth. Stir in orange juice and vanilla extract.
In separate bowl, sift together flour, baking powder, and salt. Stir in coconut and almonds.
Add dry ingredients to wet ingredients and stir.
Pour batter into a greased 8 x 8 baking dish, making sure to spread the batter evenly over the bottom of the dish.
Bake at 350 for 15-17 minutes, or until light golden brown (and toothpick inserted in middle comes out clean).
Delicious warm, slices easier when a bit cooler. Good on day 2, 3...(I have usually eaten it all by day 3). This is pleasantly sweet, but it is not SUPER rich and gourmet dessert-ish. Adjust sugar to taste accordingly. Also, although it comes out flatter, like a brownie, expect the texture to be more cake-ish than brownie-ish. Yum, just thinking about it is making me hungry...

SO HOW'D IT GO?

Well, I deviated from the recipe ingredients ...but I still followed the proportions! 

Instead of almonds, I used hemp seeds, and instead of coconut, I used a chopped up orange-flavored chocolate bar.  I added a bit of orange-flavored fiber powder to help with the orange juice flavor.  Oh, I also made muffins/cupcakes instead of a cake.

I made this recipe, pretty much to the letter. I found it kind of a dry, bland cake and we didn't taste the orange or almond in it. Mostly the coconut stood out. Could have been a bit sweeter, too. I used finely chopped almonds. I wonder if it would have tasted better with almond pieces, and more orange juice would have probably made it moister. Well, I think it's a nice base recipe that can use some playing with (as I've seen others have done.) I made this because I liked the flavors/ ingredients in it. Nice combination. Guess I'll have to play around with this if I make it again.  :)

I really enjoyed this cake  ;)b the only thing I did differently was use almond extract in place of the vanilla and I added 1/2 tsp baking soda - so that they wouldn't be too flat - I wanted them to rise like a little cake should...  i made them into cupcakes and paired with a frosting that helped bring out the other flavors of the cake:

4 Tbsp vegan shortening
2 Tbsp vegan margarine
1 cup powdered sugar
1 tsp orange extract
1/2 tsp almond extract
1/2 tsp coconut extract

Then I did an Isa-Vegan Cupcakes Take Over The World thingy by scooping out the center of each cake, and putting a little jelly and frosting in each cake, topped with a bit more frosting and a fresh strawberry and sprinkles - made for nice presentation and it was absolutely yummy.  :)>>>

This was a little breadier than cakey for me, so I like AshleyKimball's idea of making mini loaves (I did them in muffin pans, b/c my 8x8 was dirty). Even though my orange was pretty juicy, I had to add a bit of extra water to get the batter consistency just right. But what a delicious flavor! I love that there's no added oil (not to say it's low fat, per se, with the coconut and almonds), and the banana and coconut add enough sweetness that there's not too much sugar here. Will definitely make this again!

I know that this is going to be placed in an extremely different location, probably inapropriate place to ask this.. but what happened to the question and answer bulletin things on this site? am i just blind or was it completely deleted ?

This was a nice light treat. It was a nice reminder to the boyfriend that deserts don't always have to be made with chocolate to be good. lol  ;) I topped it with the orange icing suggested and it was a great touch.

i didn't have any almonds so i added 1/2 tsp of almond extract and no orange or orange juice so i used 1/2 cup soymilk.

this is sooo yummy! because i didn't have any orange anything it came out more like a really good banana muffin--the almond extract just kind of enhances the banana flavor.

next time i go to the store i'm gonna pick up some almonds and orange juice so i can make this how it's supposed to be, but i will definately keep making this :)

i made this for a vegan potluck once and it was a great hit!  thanks for the recipe. 

also, i was out of both vanilla extract and almonds, so i used almond extract instead and then topped the cake with coconut milk and fried bananas.  everybody loved it. ... just a suggestion!

this is a great cake!  I made it in two mini loaf pans and drizzled them with a glaze made of orange juice, powdered sugar and orange rind.  Also, I chopped up the almonds finely.  I highly reccomend this fragrant and flavorful cake...it greatly impressed my omnivore relatives.  They perferred it over a heart-attack-inducing, chocolate icecream brownie concoction.  It's great in the middle of winter, when you want something tropical!
