8 Minute Awesome Strawberry Jam

What you need: 

2 cups very ripe strawberries
1/2-3/4 cup sugar
1 tablespoon cornstarch
1 tablespoon water

What you do: 

1. Mash strawberries to desired consistency in a pot. Less mashing for chunky jam, and more mashing for smooth jam. Add vegan sugar, and stir.
2. In a separate container, combine cornstarch and water, and stir until cornstarch disolves.
3. Add cornstarch mixture to strawberries, and bring to heavy boil. Let boil for at least 1 minute, then reduce heat to low boil, and stir every 30 seconds or so for at least 6 minutes.
4. Pour into container of choice and refrigerate.
This is so easy and so incredibly delicious!

How long will it keep in the fridge?
Preserves from the store usually last quite awhile.
Also, can you store them in the pantry unopened?

I can only speak from personal experiance but mine kept about 1 1/2 - 2 weeks. As for storage to prevent dangerous bacterial growth this recipe needs to be stored in the fridge. You could make it shelf stable by adding some citric acid and using a canning bath with mason jars. I dont recall the boiling time for jams anymore but you can eaily look it up online. The important thing is to make it acidic to prevent botulism and give it a good through heating to kill off anyhting else and get a strong seal. Hope that was of some help!

I am sorry, I just noticed that the recipe directions said to put in container of
choice and refrigerate.

But as to the  other questions:

How long will it keep in the fridge?
Preserves from the store usually last quite awhile.
Also, can you store them in the pantry unopened?

Can you store this in mason jars for future use and if so, how long will they keep
in the jar?

Also, after they are jarred can you keep them in the pantry until opened or
do you have to store them in the fridge even if they are unopened?

Amazing flavor and so easy! I made this with 2 1/2 cups "stale" strawberries and 1/2 cup fresh blackberry/raspberry blend with a little lemon juice thrown in. Mine came out pretty runny more icecream topping than jam but i used arrowroot starch instead of corn so maybe that made a differance. The only adjustment id reccomend if you want this to come out more the texture of traditional pectin type jams id up the starch to one tablesppon per cup of fruit and adjust the water to match. I also boiled mine a few minutes longer to help break down the strawberries :). I wil absolutly be making this again!

so very tasty! I made this with some blackberries that were about to go bad and then put it over my pancakes. I think I will make biscuits to use with the rest of it.  Yum!

This so good and so easy!! I used a cup of blackberries and a cup of strawberries, with a little over 1/2 cup of sugar. Great over pancakes!

Taste awesome I added acup and a half of raw sudar because I love my jam sweet... it is conjoling right now and I am preparing my bisciuts!  :>
