35 Calorie Muffins

What you need: 

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup sugar free applesauce
1/2 cup sugar substitute, to taste
1/2 cup water

What you do: 

Spray 12 cup muffin tin and preheat oven to 350. Mix flour, soda, cinnamon and salt together. Add applesauce, sugar substitute and water, mix until just blended. Bake at 400 for 10-15 minutes or until tops have lightly browned.
You could make these with soymilk and diced apples and nuts mixed in, but it will alter the calorie content (which is approximate). I have also made these with half a mashed banana instead of applesauce, but again, that alters the calories.

SO HOW'D IT GO?

I did the something sorta to you'res exept I used whole weat flour and added some bran. SOOOO GOOD! :)>>>

Yum! I made carrot muffins based on this recipe and I used rye flour, replaced the apple sauce with 1/2 cup of chopped of carrot (food processed), and used 1/3 cup turbinado sugar... They were very moist and had 104 calories, 24 carbs, and 2 grams protein each except for some reason it only made 6 regular sized muffins...  ???

I just tried it your way it turned ouit really well! I had to bake them a little longer than 15minutes. About 17 minutes. And added some bran ,oats, and raisins to make it even healthier. I think i"ll sprinkle alittle bit of agave over the top to make it even sweeter!

I just made these for a late breakfast/early lunch snack. (I'm planning on bringing them to school tomorrow for a healthy 3rd period snack) I followed the recipe except I added about 1/4 cup apple oatmeal, a little extra cinnimon, and a handful of raisins. They were most definatly the best vegan muffins I've ever made!! Thanks for the quick, easy recipe!! (pics to come)

yes, use the natural/unsweetened variety.

These are sooo good! Took longer than 15 minutes (about 18 for me) but soo soo soo good. My omni sister even ate more than one!!

I made this recipe with frozen raspberries.  It definitely needs to be baked for more than 20 mins - maybe even 30.  Very eary recipe otherwise  :)

Not bad, not bad... ok GREAT!! Loved this recipe! They turned out great, the only thing I changed is I added 1/2 teaspoon of nutmeg. Delish :)

Add the same amount of soymilk as you would add water, and maybe 1/2-1  cup of chopped apples.  :)
