Fudge Brownies with Peanut Butter Caramel75 viewsThis brownie gets high marks for rich flavor, chewy texture and simplicity. The brownies were fudgey little squares, slightly crispy on top, chewy middles, and studded with walnut bits. I did hope for a slightly thicker brownie, although rich chocolate flavor was packed into the thinner squares.

For my first time using this recipe I was very happy with the results. I reviewed the suggestions, and based on them, went with the following modified recipe:

1 cup sugar
1/3 cup soy milk
1 Ener-G egg (1 1/2 teaspoons Ener-G egg replacer powder beat with 2 Tablespoons warm water until frothy)
3 Tablespoons vegetable oil
1 Tablespoon applesauce
1/2 teaspoon vanilla
1 cup unbleached flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
1/4 cup chopped walnuts

Peanut Butter Caramel (optional):
(modified from Veganomicon)
1/3 cup chunky peanut butter
4 Tablespoons maple syrup
1 1/2 Tablespoons brown rice syrup

Directions:
Preheat oven to 350 degrees. Oil an 8"x8" baking pan and sprinkle bottom with a little cocoa powder.

In large bowl, whisk together sugar and soy milk. Mix in Ener-G egg, oil and apple sauce.

In smaller bowl, mix flour, cocoa powder, baking powder and salt. Gradually add to dry ingredients. Whisk until ingredients are just incorporated. Don't overmix. Fold in chocolate chips.

Using a rubber spatula, evenly distribute brownie batter into oiled pan. Sprinkle top with walnut bits.

Bake for about 25 minutes. Let cool and cut into squares.

(Optional) The brownies taste rich and great on their own, but if you love the marriage of peanut butter and chocolate as much as I do, mix the peanut butter, maple syrup and brown rice syrup in a small bowl. Spread onto cooled brownies.

Makes 16 squares.
