1 cup almonds
1/2 cup sunflower seeds
1 cup unsweetened coconut flakes
3 tablespoons peanut butter
2 tablespoons sesame seeds, optional
1 tablespoon ground flax
3-4 tablespoons agave
1. Preheat oven to 350 degrees F, and line cookie sheet with parchment. Grind almonds in a food processor until crumbly.
2. Add remaining ingredients and pulse until well combined. Add enough agave to hold the mixture together.
3. Use a tablespoon measure to form round little cookies. Place on prepared sheet and bake for 8 minutes, or until lightly browned.
They burn easily because of the nuts/seeds, so watch them closely!
Yummy little cookies that are healthy-ish; great substitute for granola if crumbled or as a topping for vegan ice cream.
