1 tablespoon cornstarch
1/2 tablespoon water
1 tablespoon olive oil
1/4 small yellow onion, finely sliced
2 tablespoon whole wheat or all-purpose flour
1 cup vegetable stock
1/4 cup white wine
1 teaspoon Dijon mustard
salt, to taste
pepper, to taste
1. In a small bowl, whisk together cornstarch and water until thoroughly combined.
2. Add olive oil to a small sauce pan and heat over medium heat. Add the onions and cook until translucent.
3. Add the flour and combine well with the onions, then add remaining ingredients (cornstarch mixture, stock, wine, mustard, salt, and pepper).
4. Cook for another 5 minutes, stirring constantly, until the gravy is thick.
