1 cup uncooked quinoa
2 cups water
2 tablespoons vegan butter
1 (1 ounce) package onion soup mix
1/3 cup frozen corn kernels
1/3 cup frozen peas
1. Combine quinoa, water, butter, and onion soup mix in a medium sized pot and bring to a boil over high heat.
2. Add corn and peas, mixing to combine. Reduce heat to low, cover, and simmer for 22-25 minutes, or until liquid has absorbed and quinoa is fluffy.
