1 cup nondairy milk
1 teaspoon vinegar
4 egg equivalents, prepared (I use Ener-G)
3 tablespoons sugar, divided
1 tablespoon bourbon
1 teaspoon vanilla extract
8 slices good vegan bread (I use pan brigio, but you can use any good, crusty bread you like)
1/4 cup cornmeal
2 tablespoon vegan butter
1. Buttermilk Substitute: In a measuring cup, combine the milk and vinegar; set aside for 5 minutes to curdle.
2. In a shallow bowl, combine the egg replacer, 1 tablespoon sugar, bourbon, and vanilla into a shallow bowl. Dredge bread slices through mixture, the let bread sit for 10 minutes.
3. In a separate bowl, combine the cornmeal and remaining 2 tablespoons sugar. Coat the bread on both sides with the dry mixture.
4. Add the butter to the frying pan and fry away! Enjoy!
