1 (15 ounce) can chickpeas
1 stalk celery, diced
1/2 red onion, diced
2 teaspoons onion soup mix or onion powder
2-3 teaspoons chili powder
2-3 tablespoons vegan mayonnaise, optional
hot sauce, to taste
2 slices bread, toasted
1. Cook chickpeas in a small pot until they are soft. Add onion and celery to a medium sized bowl.
2. When chickpeas are cooked, drain the water out and wash off. Place them in a blender/food processor until smooth or crumbly (your preference).
3. Transfer chickpeas to the bowl with veggies and throw in spices.
3. Add vegan mayo and hot sauce. Mix well, then spread the mixture onto bread.
Source of recipe: I had a can of chickpeas and was getting bored of falafel. This was the result.
