3-4 large potatoes, diced
1 cucumber, sliced and quartered
4 small tomatoes, diced
2 red peppers, diced
handful black olives, pitted and chopped
sea salt, to taste
1. Put the potatoes in a pot of lightly salted water, bring to a boil then turn down and simmer for about 30 minutes.
2. Once the potatoes are cooked, drain them and put the pot back on low heat.
3. Add the rest of the vegetables and a sprinkle of salt, stir everything together, and leave it to lightly heat for a few minutes.
