1 (5-6 ounce) box couscous
2 large cucumbers, diced
1-2 large tomatoes, diced
1 cup green onion, chopped
1 1/4 cups Italian salad dressing
1 tablespoon parsley
1. Cook couscous according to box directions. Let cool. Combine tomato, cucumber, and green onion in a large bowl.
2. Add couscous. Mix this all together. Add Italian dressing until all the veggies and couscous are covered.
3. Season with parsley, and make sure everything is mixed up and evenly distributed. Chill in refrigerator, or eat right away.
This is so simple and so good. Plus, it is pretty healthy!
