1 tablespoon vegan margarine (I use Smart Balance Light)
1 to 2 tomatoes, diced
1/2 red onion, diced
2 (32-ounce) boxes vegan chicken broth (I use Imagine Organic No Chicken Broth)
3 cups vegetables of your choice of veggies, chopped (e.g., broccoli, cauliflower, zucchini, yellow squash, corn, spinach)
1 to 1-1/2 tablespoons cream of chickenless soup mix
1 tablespoon vegan chicken seasoning
pinch oregano (optional)
1. In a skillet, heat your margarine. Add tomatoes and onion; saute until onion is translucent. Remove from heat and set aside.
2. In a pot, add broth; heat to a boil. Add veggies; cook for 10 minutes.
3. Add soup mix, vegan chicken seasoning, and oregano to the tomato mixture. Cool and eat.
