1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1 1/2 teaspoons cinnamon
1/2 cup vegan butter
3/4 teaspoon vanilla
3/4 cup sugar or 1 cup natural sugar
1/4 cup applesauce
1. In a large bowl, mix flour, baking powder, salt and spices. In a smaller bowl, beat vegan butter, vanilla, sugar and applesauce until well mixed.
2. Pour wet mixture into dry mixture and knead until the dough is even. Refrigerate minimum 1 hour, overnight if you can.
3. Preheat oven to 350 degrees F, roll out dough, and cut into shapes. Bake for 10-12 minutes. Allow to cool, and frost if desired.
Source of recipe: I was looking for a simple recipe for cookies using the ingredients I had at home, and I came across one via www.recipekey.com . I can't seem to find the adress now, but it was a simple sugar cookies recipe that I modified to be vegan and added some spice.
