1 cup boiling water
1 cup raisins
1 (15 ounce) can beans (your favorite)
2 cups sugar
3 1/2 tablespoons Ener G Egg replacement + 2 1/4 tablespoons water
1 cup canola oil
1 teaspoon vanilla
3 cups whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup walnuts, finely chopped
1. Add raisins to boiling water and set aside. Mash beans until as smooth as you can get them. Add sugar, egg substitute mixture, oil and vanilla.
2. Mix completely. Preheat oven to 325 degrees F, and grease and flour baking pan. Sift in dry ingredients.
3. Drain raisins and fold in with walnuts. Spoon batter into prepared pan. Bake about 50-60 minutes, until done. Wrap in aluminum foil and serve the nest day (for better slicing).
Source of recipe: Bean bread is as old as the hills. The American Indians enjoyed it. Each tribe had a variation. This is my recipe. It doesn't taste like beans but rather a good Boston brown bread. My friends all like it so I'll share it with you.
