1/4-1/2 pound angel hair pasta
1 large tomato, diced
3 cloves garlic, minced
1 tablespoon oil
2 huge handfuls of fresh spinach, chopped roughly
salt and pepper to taste
1. Bring a pot of water to boil.Place the chopped tomatoes in a colander or on a paper towel to drain. Once the water is boiling, put the pasta in, return to a boil and let it continue to cook, uncovered, for about 6 minutes.
2. While the pasta cooks, put the oil, garlic and spinach in a wok or frying pan and saute on medium high heat, stirring frequently. When the spinach looks just wilted remove from heat and add the tomatoes to the pan, tossing to incorporate.
3. About now the pasta should be done. Drain in a colander and add to the spinach-tomato pan, mixing it all up. Add salt and pepper to taste, then serve while it's still warm.
