2 1/2 cups organic juice (I use 1 cup Pom Wonderful pomegranate nectarine juice, and a lighter juice)
1 teaspoon agar agar powder (I use Telephone brand)
1-2 tablespoons agave nectar (optional)
Berries or cut fruit
1. Place 1 cup of juice in a very clean sauté pan with the agar powder and stir. Allow this to sit for about 5 minutes to dissolve.
2. Turn the heat on and bring the mixture to a boil. Allow to boil for 1 minute.
3. Remove the pan from the heat and pour the mixture into a large measuring cup. Add the remaining 1 1/2 cups of juice and stir. If you are using a tart juice, also add the agave and stir.
4. Pour into your favorite dessert dishes or shot glasses and allow to cool for 10 minutes on the counter. Transfer to the fridge and allow to set up for at least 30-40 minutes.
P.S. To my vegan lovelies, please note that I specify a brand of Agar Agar here. This is due to my experience getting different results for the same recipe when I use different brands of Agar Agar. Hence I can't guarantee results if you use a brand other than Telephone, though your'e welcome to try! Please also feel free to drop by my blog for info on how to find super cheap Agar Agar.
