1 cup macaroni + water to cook
1/2 cup vegan cheddar cheese (I use Daiya)
3 tablespoons margarine
1/2 cup non-dairy milk (I use powder soy milk, better than milk brand)
1 tablespoon flour
1. Bring enough water to a boil for macaroni. Add the macaroni and let boil until tender. (10 minutes or so).
2. In a small sauce pan, simmer margarine. Once melted, add flour to thicken. Add nondairy milk to the pot and stir.
3. Add any additional seasoning or veggies to taste. (I use about 1/2 teaspoon cayenne) Add vegan cheese (This is the best out there if you can get your hands on Daiya products. It literally tastes the same as "real" mac and cheese and is just as creamy/buttery.)
4. Keep the mixture simmering and mix until creamy. Drain macaroni and add to mixture. Top with salt and pepper to taste, and serve.
