1 courgette, washed
1 carrot, washed
1) With a vegetable/potato peeler, peel carrot and courgette lenthways into strips/ribbons. Remember to turn the courgette after a couple of peels get a bit of green edge on some of the ribbons - makes it pretty! Mix the ribbons together.
2) Drizzle your favorite dressing over the ribbons - I love a basic oil dressing with lemon or lime juice, bit of cider vinegar and S&P.
