4 teaspoons oil (coconut, sunflower, or non-virgin olive)
1/2 cup popcorn kernels
2 tablespoons vegan margarine
2 tablespoons agave nectar
2 tablespoons organic sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1. Place a heavy pot with a tight fitting lid over medium-high heat. Add the oil and the popcorn kernals. To prevent it from burning, you will want to shake the pot frequently. This will distribute the oil and keep the popcorn kernels from sticking to the bottom of the pan. Be sure to hold onto the lid with hot pads while you shake it! Continue to cook until the popping slows down to 1 to 2 seconds in between pops. Remove from heat.
2. In a small pan, melt the margarine. Stir in the agave, sugar, cinnamon, vanilla extract, and salt. Mix well.
