1/2 cup vegetable oil
3/4 cup packed brown sugar
1/2 cup turbinado sugar
1 ripe banana
4 teaspoons vanilla
2 tablespoons water
1 3/4 cups whole wheat flour
1 teaspoon non-aluminum baking powder
2 1/2 cups quick oats
1 1/4 cups vegan chocolate bits
1 1/4 cups raisins
1. Preheat the oven to 375 degrees Fahrenheit.
2. Combine the vegetable oil and both sugars in a bowl. Mash up the banana in another bowl using a couple of forks. Add the banana to the oil/sugar mix. Add the vanilla and the water and keep mixing.
3. Add the dry ingredients in the order listed. The batter should almost be too dry to hold the raisins and chocolate chips.
4. Drop cookies onto a greased cookie sheet and bake for about 10 minutes. Let cool for a few minutes before moving to a plate or wire rack to cool.
