3 cloves garlic, finely chopped
1 small chili pepper, finely chopped
1 red bell pepper, cut into fine strips
1/2 cup mushrooms, thinly sliced
1 small red onion, thinly sliced
1 cup long grain rice, cooked and cooled
3 tablespoons soy sauce
large handful basil leaves, finely chopped
1. In a pan, heat the vegetable oil and add the garlic and hot pepper. Fry 30 seconds.
2. Add the vegetables to the pan, fry until halfway done, then add the rice and stir well. Add soy sauce and cook, stirring, until vegetables are tender.
3. Add basil to the pan. Heat for 1 minute.
