1 cup tomatoes, diced
1 cup coconut milk
1 cup sprouted quinoa
1/4 cup diced chili
chili garlic sauce (I use Sriracha), to taste
salt. to taste
Mix all ingredients in a saucepan. Cover and simmer until most of the tomato juices are absorbed. Allow to sit for a few minutes then enjoy!
