2 slices cinnamon raisin bread (I like Ezekial)
1 to 2 carrots, shredded
1 to 2 tablespoons coconut butter (Artisana tastes the BEST)
2 tablespoon raisins or chopped dates (optional)
sprinkling of cinnamon (optional)
drizzle of Agave (optional)
Take one slice of bread, and spread coconut butter on top. Layer on the shredded carrots, then the raisins (if using) and cinnamon (if using). Top off with a drizzle of agave, if you like. Now put on the other slice of bread and enjoy your dessert - for - lunch sandwich!
