1 young thai coconut
1 ounce blueberries, frozen if desired
3 tablespoons raw sunflower seeds
1 tablespoon raw pumpkin seeds
5 tablespoons coconut water
1 to 2 cups raw nondairy milk (or more coconut water)*
1) Break open your coconut. Drain the juice, scrape out meat making sure to cut off any hard bits. Blend all your ingredients until your desired consistency. Add sweetener if desired.
*I used 2cups of raw milk, but you may choose to use all coconut water instead.
Source of recipe: I came up with this using what I had as a "pick me up" smoothie. I think it came out really well!
