1-3/4 cups raws cashews, ground in coffee grinder to a meal consistency
2/3 cup lemon juice
2 tablespoons agave
2 tablespoons water
8 carrots, peeled and shredded (about 4 cups)
3/4 head green cabbage, shredded (about 4 cups)
2 cups golden raisins
1 (20-ounce) can crushed pineapple
3/4 cup chopped walnuts
2 tablespoons unsweetened finely shredded coconut
2 tablespoons maple syrup
1. Dressing: Blend cashew meal, lemon juice, agave, and water to a thin mayonnaise consistency. Add a little extra water if needed.
2. In a bowl, combine remaining ingredients (carrots, cabbage, raisins, pineapple, walnuts, coconut, and maple syrup).
3. Add dressing to carrot and cabbage mixture and toss to thoroughly combine.
Source of recipe: I had carrots and cabbage and thought what can I make. I had a recipe for vegan mayo. I removed some items and added others to make it sweet. I put the dressing on the cabbage & carrots and added a few other items I've had in a carrot salad.
