1 slice whole wheat bread
1 avocado, peeled, pitted and mashed
1 tablespoon vegan mayonnaise
2 tablespoons chopped black olives
Alfalfa sprouts (about 1/2 a handful)
1) Spread vegan mayonnaise on bread. Mash avocado into a paste and spread on top of mayonnaise. Pile alfalfa sprouts on top of avocado. Pile chopped black olives on top of sprouts. Mmmmm! :)
I will have to submit a photo next time I make this - I gobbled it up too quick!
Note: I developed this sandwich back at PSU in the 80's. I needed a fast sandwich to eat while studying. I recently have become vegetarian and reading all the wonderful recipes on this site brought my favorite sandwich back to mind. I had one for dinner tonight, making yummy sounds the whole time I ate it, generating annoying glances from my teenage son.
Source of recipe: I came up with this recipe 25 years ago in college, before I was vegetarian!
