2 servings whole wheat penne pasta, cooked according to package directions
1 (4-ounce) can mushrooms, drained (or more if you love mushrooms)
1 cup prepared hummus
couple spoonfuls of stewed tomatoes or peas (optional)
salt, to taste
pepper, to taste
My mom used to make this when I was a kid and I made it by accident tonight!
1. Preheat oven to 375 degrees F.
1. Put cooked penne pasta in a baking casserole pan.
2. Stir in mushrooms, hummus, tomatoes or peas, salt, and pepper. Bake for 40 minutes, or until ingredients are heated through.
I was trying to make baked penne with something other than tofu and was surprised at how much this tasted like tuna casserole.
