2 tablespoons olive oil
5 medium potatoes, peeled and chopped
1-1/2 cups shredded carrots
1 onion, chopped
4 cups vegetable broth
2 cups water
8 ounces firm tofu
3 teaspoon curry powder
1 teaspoon minced garlic
1 teaspoon minced ginger
We absolutely loved this soup! SO easy to make and perfect on a cold day!
1. In a large pot, combine olive oil, potatoes, carrots, and onion over medium-high heat. Cook until onions are translucent.
2. Add vegetable broth and water to pot and cook over medium heat until potatoes are soft. Use a spoon or ladle to mash the potatoes pieces a bit OR you could remove a portion of the soup and use a blender.
3. Reduce to low heat and add tofu, curry powder, garlic, and ginger.
4. Cook 4 to 5 minutes more and serve. Enjoy!
