2 large bell peppers, any color, cut into strips
2 medium carrots, cut into strips
2 roma tomatoes, chopped
1 medium/large zucchini, sliced or cut into strips
1/3 cup apple cider vinegar
1 tablespoon olive oil
basil, to taste
black pepper, to taste
cumin, to taste
oregano, to taste
1) Place all the veggies in a large bowl and toss a bit to combine.
2) In a small bowl or measuring cup, whisk together oil and cider vinegar. Add remaining spices to taste. Pour over the veggies, then stir/toss gently to coat.
3) Cover and refrigerate until ready to serve. If it's going to be a while, stir the salad now and then to distribute the flavors. That's all there is to it!
