1 bunch asparagus
1 teaspoon olive oil
1 teaspoon sweet cider rub
1/4 cup vegan cheese, crumbled
2 tablespoons pine nuts, toasted
1. Preheat oven to 400 degress Fahrenheit or preheat grill to medium-high heat. Toss the cleaned asparagus in the olive oil and rub.
2. Place on baking sheet and roast for 7-10 minutes, or place on grill and cook for 10-12 minutes, until desired consistency.
3. Top with vegan cheese and toasted pine nuts and serve.
Source of recipe: This recipe came from my sister. I wanted an easy recipe to add my artisan rubs to. I have a sweet cider rub from www.iprobbq.com  and it just makes this recipe even better. I have given it to all my friends and they rave about how it is the best tasting asparagus they have ever had, even their kids eat it up.
