1-1/2 cups whole wheat flour
1/2 cup brown sugar
2 tablespoons ground flax seed
1 tablespoon baking powder
1 cup non-dairy milk
1 cup blueberries
1 mashed banana
1/2 cup applesauce
1/2 cup chopped pecans
1. Preheat oven to 350 degrees F. Grease a muffin tin.
2. In a large bowl, mix together flour, sugar, flax seed, and baking powder. Stir in non-dairy milk, blueberries, banana, and applesauce.
3. Spoon the batter into muffin tins in equal amounts and add pecans to the top.
4. Pop into the oven. Check muffins after 15 minutes and test with a knife until muffin pops back up when you poke it. Once they are ready, let them sit for 10 minutes and enjoy.
