2 medium sweet potatoes, sliced into 1/2" rounds
2 tablespoons vegan butter, melted
2 tablespoons olive oil
2 teaspoons molasses
salt, to taste
very hot cayenne powder, to taste
1. Preheat oven to 450 degrees F. Place sweet potatoes on cookie sheet.
2. In a bowl, mix together remaining ingredients (butter, olive oil, molasses, salt, and cayenne powder). Brush over yams.
3. Bake for 20 minutes. Flip over sweet potatoes and bake for an additional 20 minutes (40 minutes total), or until desired done-ness is achieved. Drain on paper towels. Enjoy!!
