2 tablespoons vegan margarine
1/4 teaspoon salt
1/4 teaspoon dry mustard
dash vegetarian worstershire sauce
2 drops tabasco sauce (or cayenne pepper)
2 tablespoons flour
1/2 cup nondairy milk (I use soy)
1 cup vegan cheddar cheese, grated
6 pieces bread, toasted
1. Turn oven to broil. Melt butter in a saucpan over medium heat, add mustard, salt, and seasonings. Add flour and whisk until smooth.
2. Add milk and whisk constantly until smooth and thick (this may take a couple of minutes). Remove from heat and add grated vegan cheese.
3. Spread mixture over slices of toast, going right to the edge of the crust. Place on cookie sheets and broil untill bubbly and slightly browned.
I have used the cheese sauce mixed into cooked macaroni noodles and was very happy with the result!
