1/2 cup quinoa
1 cup broth or water
1 small onion, diced
2 cloves garlic, diced
1 (15-ounce) can black beans, rinsed and drained
1 (7-ounce) can chipotle salsa (adobo sauce)
2 tomatoes, diced
1 avocado, diced
juice of 2 limes
1. In a pot, bring quinoa and broth to a boil. Simmer for 15 minutes (or follow your package directions).
2. While quinoa is cooking, saute onions and garlic until soft. Add black beans. Then add chipotle salsa and cook just until heated through. (Caution! Chipotle salsa is very spicy! Could possibly cut with tomato sauce or regular salsa if its too hot.)
3. Remove from heat and add tomato. Dice avocado and sprinkle liberally with lime juice, add to pan. Add remaining lime juice from both limes.
4. Combine quinoa with black bean mixture. Sprinkle with cilantro and enjoy!
