2-1/3 cups water
1/2 cup sugar
1/3 cup dried apricots, chopped
1/3 cup dried cherries, chopped
1/3 cup dried cranberries
1 tablespoon vanilla extract
2-1/2 cups whole wheat couscous
1/2 cup toasted slivered almonds
1/2 cup toasted hazelnuts, chopped
1. In a saucepan combine water, sugar, apricots, cherries, cranberries, and vanilla extract. Boil 2 minutes.
2. Stir in couscous, remove from heat and cover pan with lid. Let couscous absorb all the liquid, stirring occasionally. Fluff with fork.
3. Add almonds and hazelnuts. Toss. Serve hot with almond milk, or the milk alternative of your choice.
