1 cup brown rice flour
1 cup white flour
1/4 cup ground flax seed
1 teaspoon baking soda
1 cup sugar
2 teaspoons vanilla
2 egg substitutes (do not use banana)
1/2 teaspoon salt
1 cup vegan butter, room temperature
1 cup chocolate chips
1/2 cup carob chips
1/2 shredded unsweetened coconut
1 cup walnut chips
1) Preheat oven to 375 degrees Fahrenheit.
2) In a bowl, mix flours, flax, baking soda, and salt. In a second bowl, mix together the sugar with vegan butter. Stir in vanilla and egg replacers.
3) Stir the dry mixture into the wet mixture. Add chips and nuts, mixing to incorporate.
4) Spoon onto cookie sheets and bake for about 11 minutes. The cookies will be squishy when you remove them, but they'll harden up as they cool.
