8 ounces artichoke hearts
a handful of slivered almonds
zest of one lemon
1 garlic clove
salt and pepper, to taste
olive oil, as needed to make it spreadable
1 pita pocket
2 tablespoons artichoke spread (recipe included)
1 to 2 slices onion
1/2 roasted red pepper
1/4 zucchini, sliced
salt and pepper to taste
1) Prepare artichoke spread first. Combine the artichoke hearts, almonds, lemon zest, garlic in a food processor and blend until desired consistency is reached. Add oil, if needed, to create a spread. Salt and pepper as desired.
2) To prepare sandwich, toast a pita pocket and spread the artichoke mix inside. Saute the veggies until soft. Season with salt and pepper. Fill pita with vegetable mixture. Enjoy!
Source of recipe: The artichoke spread was inspired by a recipe I saw on Food Network, but I modified it and the directions are my own. I also combined it with the sandwich that is my own idea.
