2 1/2 cups black-eyed peas, cooked
1 1/2 cups white Northern beans, cooked
2 cups vegan chorizo (I used homemade)
2 (14 ounce) cans stewed tomatoes
2 cups potatoes, chopped
2 tablespoons onion powder or onion, minced
2 cloves garlic, minced
3 cups veggie broth
red pepper flakes, to taste, optional
1. Combine all ingredients in a crock pot.
2. Stew in the crock pot for 6+ hours.
3. Be sure to add additional broth or water if too much cooks off.
